🎶 Anaerobic Honey Process:
This coffee undergoes a special anaerobic fermentation process, where the beans are fermented in sealed, oxygen-free tanks to develop a deeper, more complex profile. The honey processing method allows some of the coffee’s natural sugars to remain during drying, enhancing its sweetness and body.
🌞 Slow Drying & Careful Storage:
After fermentation, the beans are slow-dried on raised beds for 15-20 days, preserving their delicate fruit notes and clean acidity. They are then stored in GrainPro bags for added freshness and stability.
Brewing Recommendation
☕ Best enjoyed as a filter brew, where its clean flavors and bright acidity shine.

It comes to you from Colombia, from the Quindío region, specifically Armenia, at an altitude ranging between 1700-1200 above sea level, where the Castellón farm is located, which covers an area of 7 hectares at an altitude of up to 1450 above sea level.
Carlos Orven comes from a Colombian coffee-growing family. With his experience and expertise, he was able to prepare the soil, restore and develop the natural springs, and plant beautiful, colorful flowering shrubs like heliconia and romilia, as well as several native trees, when he bought the farm 32 years ago. Now, the Castellón farm, surrounded by trees, looks absolutely stunning.
The crop was treated using the anaerobic honey method, where the coffee is fermented for up to 72 hours while preserving the slimy film surrounding the coffee beans, then spread on raised beds, which helps to highlight and reveal the coffee flavors, resulting in a wonderful blend of apple and lemon acidity and sugarcane sweetness.
It was roasted using a process suitable for espresso and drip drinks so that you can enjoy it in any cup you desire.
