🛠 Processing Method

Anaerobic Natural with Melon:
Handpicked cherries are fermented in sealed, oxygen-free tanks together with fresh melon. During the controlled anaerobic phase, the melon’s natural sugars and esters infuse the coffee, followed by slow sun-drying for maximum flavor retention and clarity.
