From humble beginnings using a hand-pulper retrofitted with a washing machine motor, Senel has transformed his project into a state-of-the-art micromill that today produces coffees of remarkable character and quality.

• Pre-drying on raised beds for 72 hours

• Covered fermentation cycles (1 hour × 3 times daily)

• Slow drying on raised beds for 22–29 days, moved every 2 hours for uniformity

• Rested for 2 months post-drying to stabilize flavors

• Finished with meticulous milling and export preparation
