This coffee undergoes a 72-hour dry anaerobic fermentation with the pulp intact. During fermentation, selected yeast and fresh coffee cherries are added to enhance sweetness and fruit complexity. After fermentation, the coffee is pulped and slowly dried on raised beds, with cherries placed among the beans until ideal moisture is achieved.
