This farm is located in Chinchiná, Caldas, Colombia, cultivating Pink Bourbon, SL28, Typica, and Bourbon. The washed process begins with creating a starter culture containing lactic acid bacteria and Saccharomyces cerevisiae. 80 liters of this culture are enriched with watermelon and panela or molasses—watermelon adding flavor, while the sweeteners boost fermentation activity. After floating and pulping the cherries, they are placed in a 200-liter sealed tank, combined with the 80 liters of starter culture, and fermented for 150 hours. The coffee is then sun-dried for 2–3 days and finished under canopy shade for 12–13 days until reaching 10–11% humidity. Cup profile: notes of watermelon, melon, and ice cream—refreshing and delicious.
