Jerial Roastery’s Wachuri Kenya is a premium specialty coffee sourced from the Nyeri region, renowned for producing some of the finest coffees in Kenya. This washed Ruiru varietal is cultivated at elevations of 1,400 to 1,600 meters above sea level, allowing for optimal flavor development. With a cupping score of 86 to 89, this coffee presents a vibrant and well-balanced profile, featuring notes of mandarin, red cherry, and delicate floral undertones. Best enjoyed through filter brewing methods such as Chemex, Wachuri Kenya offers a refined and complex tasting experience for coffee enthusiasts.

Jerial Roastery’s Wachuri Kenya undergoes a washed (fully washed) processing method, which is widely recognized for enhancing the clarity and brightness of the coffee’s flavor profile.

Processing Steps:

  1. Harvesting: Ripe coffee cherries are carefully handpicked to ensure only the best quality beans are selected.
  2. Pulping: The outer fruit layer is mechanically removed, exposing the coffee beans.
  3. Fermentation: The beans are placed in fermentation tanks for a controlled period to break down the remaining mucilage, allowing for a clean and crisp cup profile.
  4. Washing: The beans are thoroughly washed to remove any residual mucilage.
  5. Drying: The beans are spread out on raised drying beds under the sun, where they are regularly turned for even drying. This process can take up to two weeks, depending on weather conditions.
  6. Milling & Sorting: Once dried, the beans are hulled to remove the parchment layer, then sorted by size and density to ensure consistent quality.

The washed process enhances the bright acidity, clean mouthfeel, and pronounced fruit and floral notes that define Wachuri Kenya’s distinctive flavor profile.

Flavor Notes:

  • Mandarin – A bright, citrusy sweetness with a refreshing zing.
  • Red Cherry – Juicy and vibrant, adding depth to the cup.
  • Floral Undertones – Subtle, elegant floral hints for a delicate aromatic finish.

Acidity:

  • Bright and lively, enhancing the fruit-forward characteristics.

Body:

  • Medium-bodied with a smooth, clean mouthfeel.

Aftertaste:

  • Crisp and lingering, with a refined sweetness that gently fades.

Best suited for filter brewing methods (e.g., Chemex, V60, Kalita Wave) to fully express its clarity and complexity.
