ABOUT ANAEROBIC NATURAL PROCESS
Fully ripe Ateng Variety (Common name - Catimor) are handpicked by farmers. The outer skin of cherries is then peeled off and prepared for fermentation. The cherries placed in fermentation tanks are constantly monitored for Humidity, Oxygen and temperature. Cherries are left in this controlled environment for several days until the desired state is achieved.
The processed cherries are then dried on raised sun beds. The cherries remain in the drying stage for several weeks and once they have fully dried the excess mucilage is removed and the beans are sent for sorting and packing.
