Meet the farmer.
A family-run business since 1988, Vinhal Estates are award-winning, producing very high-quality coffees in the heart of Minas Gerais state, in Cerrado Mineiro Region, Brazil.
In 1988 Mr Zico Vinhal planted in the soil with his own hands the first seeds of the family’s business, what is now known as Vinhal Café’s Artesanais.
Today, the farm is run by the father and son duo Afonso and Rafael. Together, they’ve paved the way for excellent specialty coffee production, including this innovative triple fermentation-washed experimental lot called ML-16.
All the family is very passionate about coffee and proud of all the awards they have already won. They know their product stands out for its highly different aromas and flavours.
So, with great pride, we invite you to try and testify to the quality of Vinhal’s coffee!
Process.
1. Mechanical harvest.
2. Washed in order to remove the underripe cherries.
3. Dry Aerobic fermentation for 56 hours.
4. First washed with hot water, followed by a second wash to create a thermal shock.
5. Dry anaerobic fermentation for 196 hours.
6. Washed again with hot water, followed by a second wash to create a thermal shock.
7. Depulped.
8. Anaerobic fermentation with water for 120 hours.
9. Centrifuged
10. Dried on raised beds for 21 days.
